Cooking classes & Training

 

Class 1: Traditional cooking

Schedule 9.30 am to 1 pm

9:30 – 10:00 am: Meeting with Chef at La Verticale and market visit

10:15 – 1:00 pm: Demonstration and tasting of 5 dishes

Tasting menu:

• Vietnamese banana flower salad
• Hanoi nem (deep fried spring rolls)
• Grilled chicken with lemon leaves
• Bun cha
• Sautéed pumpkin branches

Class 2: Vietnamese Traditional cooking

Welcome cocktail and dinner include.

Schedule: 3 pm to 7 pm with dinner (prior 2 hours)

3:00 – 4:00 pm: Meeting with Chef and market visit

4:00 – 7:00 pm: Participate with Chef

through 5 Traditional Vietnamese dishes Tasting

Class 3: Demonstration and tasting with Vietnamese spices

Tasting of small appetizers with spices and explication of original flavor

Schedule: 11 am to 1 pm or 5 pm to 7 pm

 

 

Other option: Market visit (about 2 hours and half)

and tasting of small appetizers

Schedule: 9.30 am to 11:30 am or 3 pm to 5:30 pm

Class 4:

1. Innovation of Vietnamese traditional recipe

through 6 dishes with lunch

Schedule: 1 day (9.30 am to 4:30 pm)

 

 

2. Innovation of Didier Corlou’s fusion cooking

through 8–10 dishes with dinner

Schedule: 9.30 am to 17 pm (dinner after)

1. Master Traditional cooking class

Schedule: 3 days

9.30 am to 12.30 pm / Lunch: 1 pm to 1.30 pm / 1.30 pm to 4.30 pm

• Market visit
• Realization of 15 recipes: 5 Starters+ 5 Main courses+ 5 Desserts
• Demonstration of spices
• Three lunches

We’ll pick you up at your hotel and bring you back (prior 15 minutes)

 

 

2. Didier Corlou’s fusion

Schedule: 3 days

9.30 am to 12.30 pm / Lunch: 1 pm to 1.30 pm / 1.30 pm to 4.30 pm

• Market visit
• Realization of 15 recipes: 5 Starters+ 5 Main courses+ 5 Desserts
• Demonstration of spices
• Three lunches

We’ll pick you up at your hotel and bring you back (prior 15 minutes)

 

 

Notice:

Our classes are available from Monday to Saturday

Orders receive 48 hours in advance minimum and booking for at less 2 pax.

All the cooking class will be organized at Carambola house - Didier Corlou residence

or Madame Hiên Restaurant at Chan Cam.

For each group of more than 10 people, we offer 1 FOC.
